Pizza Topped Sweet Potatoes

I love Thursday suppers. Thursday’s are for “meatless” suppers. If I have leftover meat, it may get thrown into or onto our food, but I don’t cook meat for the meal. Tonight, I had a thought, and a quick Google search told me that Pizza Topped Sweet Potatoes weren’t original, but also weren’t crazy.

These are good. They are rich and buttery. Cheesy and spicy. Filling and healthy. Danny has made a suggestion for improvement, and that will come at a later time. For now, just as these are, try them. It’s worth the experimentation.  I promise, they are MUCH better than stuffed squash.

  1. 5 Sweet Potatoes
  2. 1/2 cup pizza sauce OR Alfredo sauce
  3. 1 cup shredded mozzarella cheese
  4. 1/2 cup melted butter
  5. 1 T Italian herb blend
  6. 1/2 t garlic powder
  7. 1/2 t salt
  8. Pizza Toppings
  1. Scrub and pierce sweet potatoes. Place on a foil covered baking sheet and bake at 375 until fork tender. This takes 30 minutes to an hour, depending on the size of your potatoes.
  2. Meanwhile, combine the butter, herbs, garlic powder, and salt.
  3. Split hot sweet potatoes in half lengthwise and place bake on the baking sheet.
  4. Make several cuts down into the halves; this allows the butter mixture to be better distributed.
  5. Equally spread the melted butter mixture over all of the halves. I used a tablespoon.
  6. Spread the pizza or Alfredo sauce over the potatoes. Sprinkle with cheese and any toppings you like.
  7. Return the potatoes to the oven and bake until the cheese is melted and bubbly, about 15 minutes.
Toppings we think would be delicious
  1. ham and pineapple,
  2. sausage, pepperoni, and sauteed green peppers,
  3. diced chicken, red onions, and sauteed red peppers (with Alfredo)
  4. I cook 5 large potatoes for our family (two adults, 7 year old, 4 year old, 2 year old) and this provides enough for a leftover meal.
