Taco Salad

One of our favorite meals is taco salad. It’s also one of the fastest to fix, which makes me happy! We eat leftovers cold or re-heated; leftover meat can be used in soups. With the price of grassfed beef (it is 7.49/lb here), there needs to be a way to cut the cost of the meal. The solution is simple: beans and vegetables.

I have no real recipe, so I will give approximations and directions.

Cheap Taco Meat Mixture

1 lb ground meat
1 medium onion, chopped
2 bell peppers, chopped
frozen whole kernel corn
Cooked black turtle beans
1 tomato, chopped
2 packages of taco seasoning OR a double recipe of homemade seasoning

Brown the ground meat over medium heat. When it is done, add the onions and peppers. You can see here that there is about equal amounts of burger & chopped vegetables. Cooked just until the onions & peppers are starting to brown.

Add corn, beans, tomatoes (I forgot!), and taco seasoning.

I add enough corn and beans to make a ratio of 1:1 with the meat, onion, and pepper mixture.

Cooked this until the corn and beans are heated through. Tada! It’s that simple.

I especially love using red peppers. It really makes the dish pop in appearance!

We love using this for salad, but we’ve also made wraps and tacos, too!
